I don't understand why when I copy something (word, picture..ect) it will paste once but if I hit the back button and go to another screen to paste it, it looses the copied text. Its like it doesnt store the last copied thing. Am I missing something here? My old phone would store whatever I copied indefinitely until I copied something else.

I can't say how long it stays like this but after you paste something the paste button moves slightly to the left and becomes half hidden, assuming that you have finished with it.
If you want to paste again then you need to tap on the half hidden paste button.
I am also assuming that you can actually paste into the place you are not seeing the paste button.

Yea I saw that it does that but this time it greys out and you cant paste. Its a bit irritating.
