Strange, I very strongly seem to remember long press of search to go straight to Bing. The window pane slid up automatically and everything.

Exactly. This has bugged me since wp8 was released, and I once started a topic complaining about the exact same thing.
This doesn't seem to be true. I'm running gdr3 and still have the standard, boring accent color with disappearing headphones. Is there a setting I missed somewhere?

I suppose I should mention that I have a white 920, should colors make a difference. But yeah, mine clicks. Wish I'd never read this thread, I probably would have never noticed. ;)

Unfortunately if you try to get that app, it'll tell you that it won't work with your new 920 because it only supports wvga resolution, ie windows phone 7. So you can't get it. :(
For the data thing, if you're on at&t, I think you can just dial *3282# into the phone dialer, hit call, and they will instantly send you a text message telling you how much data you've burned...

Just picked up my white Lumia 920 yesterday and I am loving it (I switched from a sprint HTC arrive), apart from some minor issues. One of which is the live tile behavior for the music+video app.
Nice one! That would actually be really handy.
