Hello guys, I've been planning to flash my device to get rid of some problems. But I have some questions on my mind. Will it void my warranty? Or if it does, will they be able to see that I flashed? I've heard that flashing changes the phone's product number or something like that and they can see it that way. Is that true?

Theoretically yes, but as long as your software flash keeps the phone working, you could get away with it. I've flashed my Lumia every time for update, nothing change. Local Nokia Care examined and told me, I am still under warranty. However, don't take my word for it!
